Tabouli



A classic Mediterranean salad, there are tons of recipes for this. It's like any salad recipe out there. Each family makes it their own. My recipe comes from an old family friend who hails from Greece. It's extremely healthy and adds a little pep to most any meal and is really great in the summer when you're craving something light.

You can also add cilantro or any grain you find tasty. Some people add cucumbers and I will sometimes put a splash of balsamic vinegar into it. You can also omit the grain if you don't like or want it.


Tabouli

1 Cup Quinoa or Bulgar Wheat (Cooked)

1 Cup Parsley Leaves (Fresh & Minced)

Onion (Chopped)

Tomatoes (Diced)

3 Tablespoons Extra Virgin Olive Oil

1 Teaspoon Sea Salt

Lemon Juice to taste

1. Cook the Quinoa or Wheat according to the package's directions.


2. Add the parsley, onion, and tomatoes.


3. Add quinoa or wheat.


4. Toss them together.


5. Stir in oil, lemon juice, and salt.


6. Serve and enjoy.


7. Refrigerate leftovers.
