This is a twist on a recipe I found for Strawberry Oatmeal bars. Their recipe was good, but I always like to add my own twist when I cook.

You don't have to add the icing, but my kids prefer the icing. And you can use any preserve that you like. Blackberry, boysenberry, etc. Even lemon curd. They're all delicious.
Oatmeal Strawberry Bake
3/4 stick Cold Butter, Sliced
1 1/2 c. All-purpose Flour
1 1/2 c. Quick or Regular Oats
1 c. Packed Brown Sugar
1 tsp. Baking Powder
1/4 tsp. Salt
10 To 12 Ounces Fruit Preserves (I usually use strawberry)
1. Heat oven to 350 degrees F (175 degrees C).
2. Butter a 9 x 13 or 8 x 10 baking dish.
3. Combine flour, oats, brown sugar, baking powder, and salt.
4. Add butter to mixture using a pastry cutter until it becomes a coarse crumbly texture.
5. Divide the mixture.
6. Cover the bottom of the pan with half the mixture, pressing it together to look like an uncooked granola bar. But it doesn't have to be tight or fully pressed together.
7. Cover the mixture with preserves. I like to use a spoon to spread the preserves over the crumble.
8. Add the second half of the mixture over the preserves. Lightly press the top layer together.
9. Bake until light golden brown on top (35 to 40 minutes).
10. Let cool in pan.
11. Add optional icing by drizzling over the top.
12. Enjoy!
