Side Dish
An old fashioned comfort food that I can't remember the first time I had some. It's great in the summer and especially good on a cold winter's night. This is soo much better than the box kind!
Granny Mae Wisdom--Doc, life is going to kill me, eventually. If I have to die, I'm going out with a Coke in one hand and fried chicken in the other.
Mac Cheese is a basic kid staple that can be dressed up with ham or a bread crumb topping. While a lot of people bake theirs, I don't. My sister always added eggs to hers. Again, I don't. My boys weren't that patient. I had to find a recipe that could be cooked fast on a stove.
Mac Cheese
2 1/2 Cups Elbow Macaroni Noodles
1/4 Cup Butter
1/2 Cup Milk
1/2 Sharp Cheddar Cheese (Shredded)
1/2 American Cheese (Shredded)
Salt to taste
1. Place about 6 cups of water in a pan.
2. Add ONE TABLESPOON of salt to the water, if desired.
3. Add ONE Bouillon Cube of Chicken to water, if desired.
4. Bring water to a boil over high heat.
5. Add macaroni to water and cook until tender. About 15 to 20 minutes.
6. Once the noodles are done. Remove from heat and drain immediately.
7. To ensure that the mac cheese isn't watery, return the noodles to the pot and heat over medium-high heat for about a minute. Stir gently to ensure all the noodles dry out. The edges will start to look white. Careful not to scorch.
8. Add the rest of the ingredients.
9. Serve!
