A fun tasty, AND beautiful dessert that will stun at parties.
I worked with my sister as a caterer and one of the things you learn fast in catering is how to make a lot of easy and pretty desserts with basic ingredients that are tasty and that will keep and transport without a lot of damage. That is what makes this a holiday fave of mine, especially for those potluck parties. It's as tasty as it looks and is so easy to make. The basic recipe is also one I use for my banana pudding, along with a number of other quick desserts that I'll post later.
Granny Mae Wisdom--No woman ever killed a man while he was washing dishes. Just sayin'.
I sometimes substitute mini chocolate chips for the grated chocolate, or put the chips in a nut chipper to shred it. It works just as well.
Easy Tiramisu
8 oz Reduced Fat Philly Cream Cheese
8 oz Cool Whip, divided
2 Squares semi-sweet baking chocolate approx 1 oz each, grated coarsely
1/2 cup water
1 tsp instant coffee
3 cups 1 or 2% milk
2 small boxes vanilla instant pudding mix
48-52 Nilla Wafers
1 cup fresh raspberries
1. Cut cream cheese into cubes and place in a large bowl, then divide Cool Whip.
2. Next, microwave the water on high for about 30-40 seconds or until hot. You can also warm it in a teapot warmer. Stir in coffee granules until well blended, then set aside to cool.
3. Then beat the cream cheese until creamy.
4. Add milk gradually until well blended with cream cheese.
5. Using a large spoon, add dry pudding mix to the cream cheese mixture until blended.
6. Then stir in 2 cups of the Cool Whip. Mixture should be good and thick.
7. Take about half the cookies and line the bottom of your dessert bowl, then drizzle with one-half of the coffee.
8. Spoon in half the pudding mixture over that and sprinkle with half the chocolate.
9. Repeat all the layers.
10. Lastly, top with remaining Cool Whip and garnish with raspberries.
11. Keep refrigerated.
