Easy Eggs

Easy breakfast to get the kids to school.



As everyone knows, I'm not a big morning person, but my baby Boo is. When he was young, he'd run into my bedroom and pound the mattress with his little Boo fist and demand his breakfast, which forced me to become creative so that I could make easy breakfasts that were basically foolproof. Hence my creation of the Easy Breakfast Egg-bake! I would used a Mason jar, two eggs, 1/4 cup milk and then whatever ingredients met the Boo (or my) fancy. Onions, cheese, bacon bits, salt, pepper, etc, and voila! Eggs!


Granny Mae Wisdom--breakfast isn't just for morning. Eat pancakes at midnight. Why not?

Basic thing is, never be afraid to add your own spin. Except for peanut butter and chocolate. My Boo tried it once. I love my youngest son and have to say, that didn't work out so well. But there's always his next attempt in the kitchen, which is why I have not one, but two fire extinguishers.


Basic Recipe


2 eggs 1/4 milk Salt & Pepper to taste


Optional ingredients as suggestions: Sausage crumbles Onions

Cheese Bacon Bits Oregano Chili powder Herbs de Provence

Beat eggs and add in milk. Stir in ingredients. Pour into a dish or cup, then microwave for three (3) to five (5) minutes. Let cool for two (2) minutes and serve.
