My son stumbled across this recipe at AllRecipes.com while looking for something else. He loves casseroles and Mexican/Tex-Mex so he asked me to make it. It was delicious. I did modify the recipe a bit. But it came out exceptionally tasty.

I didn't use regular Tortillas. I used the Carb Balance which are smaller. I just used a few more to make it work and it was delicious. Don't be afraid to experiment.
I should also mention that I used the Simi Sauce to spice it up and it was WONDERFUL!
Cruchwrap Casserole
I don't normally make my ground beef on the stove. I hate the greasy mess. Here is how I make ground beef:
Ground beef
Salt & Pepper
Garlic Powder
Diced Bell Peppers
Diced Onion
Worcestershire Sauce
1. Place ground beef in a microwave safe casserole pan.
2. Break ground beef into pieces.
3. Add the rest of the ingredients to suit your tastes. You might want to go light on the Worcestershire Sauce until you get a feel for how it changes the taste.
4. Cover with a lid and microwave 5-7 minutes depending on how much meat you're seasoning.
5. Pull out dish, uncover, and break up meat until it's a fine texture.
6. Cover and return to microwave for another 5-7 minutes (until it's cooked thoroughly).
7. Remove from microwave and put in a strainer.
8. Bake until bubbly (about 30 minutes).
9. Rinse grease from meat (it will cut the calories and other things your body doesn't need without changing the flavor).
10. Lightly pat dry with paper towel.
11. Meat is now ready for recipes.
