Boo's Fave Waffles

Breakfast



Boo had a Waffle House addiction and dared me to come up with waffles that could outdo them. It took me a couple of tries, but I finally constructed a recipe that he admitted was superior to his favorite "bought" restaurant meal.


Granny Mae Wisdom--First two years you'll want to eat 'em up. After that, you'll wish you had.

As with everything, my boys can never agree on how they like their food. Ian prefers his waffles with chocolate chips so I usually spoon his into a smaller bowl to put the chips in before I cook them. Meanwhile Madaug likes his with fruit, so I top that after cooking or spoon into a bowl to add crushed bananas or strawberries to the basic batter recipe. Get creative! Never be afraid to experiment!


Recipe

1 1/2 cups self rising flour

1 egg

1/2 cup granulated sugar

2 Tbsp melted butter

2 Tbsp vegetable oil

1/2 cup half and half

1/2 cup milk

1/4 cup buttermilk

1/2 tsp. butternut (or cake batter) extract


Optional


Melted Butter Whipped Cream

Syrup

Powdered Sugar

Fruit

Chocolate Chips

1. Lightly beat egg.


2. Place all dry ingredients in a medium bowl.


3. Add wet ingredients, including egg.


4. Mix together, taking care not to over mix.


5. Use additional melted butter to coat a heated waffle iron.


6. Pour batter into iron and cook until golden brown.
