From the moment my Boo was born, he adored Broccoli. No idea why. Where most moms have to beat their kids to get them to eat veggies, mine begged for them. Boo would eat them any way I served them: raw, steamed, and of course, smothered in cheese.
Over the years, I played around with the recipe and this is the one that Ian decided he likes the best. I have to say that I while I'm not a big broccoli fan, I do adore this one!

You can also add in a can of Mushroom Soup and Rice to make a casserole.
Boo's Cheesy Broccoli
1-2 packages frozen chopped broccoli
1/2 Cup Diced Onions
2 Tablespoons Butter
1 Cup Velveeta Cheese
1/2 Cup Colby Jack Cheese
Milk
Parmesan Cheese
Seasoned Bread Crumbs
Salt to taste
Pepper to taste
1. Chop broccoli into pieces.
2. Saute onions in butter until tender.
3. Add Cheeses and stir to melt.
4. Add Tablespoons of milk until the cheese is a desired consistency.
5. Add Broccoli.
6. Add Salt and Pepper.
7. Cook until Broccoli is tender.
8. Top with bread crumbs.
9. Serve and enjoy!
