Banana Pudding

Updated: Sep 20, 2019

A fun tasty, AND beautiful dessert that will stun at parties.

As you can tell from the photo, this is such a family favorite that I couldn't even get a photo before one of my gremlins snatched a bite of it. This is a staple comfort food that's been in my family for years. I've tweaked and experimented with the old recipe that used to require baking and making custard. To me, especially with our busy lifestyles, this one is quicker and just as nummy. I think my gremlins agree.

Granny Mae Wisdom--If it ain't broke, don't fix it. But sometimes even perfection could use a little chocolate.

I sometimes substitute mini chocolate chips for the grated chocolate, or put the chips in a nut chipper to shred it. It works just as well.

Easy Banana Pudding

8 oz Reduced Fat Philly Cream Cheese

8 oz Cool Whip, divided

2 Squares semi-sweet baking chocolate approx 1 oz each, grated coarsely or chocolate chips

3 cups 1 or 2% milk

2 small boxes vanilla instant pudding mix

Nilla Wafers

Bananas to fit the bill

Lemon juice

1. Cut cream cheese into cubes and place in a large bowl, then cut up bananas and cover with a light coating of lemon juice.

2. Beat the cream cheese until creamy.

3. Add milk gradually until well blended with cream cheese.

4. Using a large spoon, add dry pudding mix to the cream cheese mixture until blended.

5. Next stir in 2 cups of the Cool Whip. Mixture should be good and thick.

6. Line the bottom of your dessert bow with the Nilla Wafers.

7. Cover wafers with a layer of bananas.

8. Spoon in half the pudding mixture over that and sprinkle with chocolate.

9. Repeat all the layers.

10. Lastly, top with remaining Cool Whip and garnish with chocolate chips.

11. Keep refrigerated.
