Arancini (Rice Balls)

Appetizer





When I was in college, I had a roommate from Italy. She taught me a lot of great recipes and this was one of my favorites.


Granny Mae Wisdom--just a dab of this. Just a dab of that. And pray it works out!

You can also dip them in Thousand Island or add a splash of hot sauce to them to spice them up. Never be afraid to experiment.


Arancini (Rice Balls)

2 Cups of cooked rice using chicken broth instead of water & 2 tsp of seasoned butter

1 Small Onion (diced)

1 Cup Italian Blend of Cheese

1 tsp Minced Garlic

1 dash Tabasco

1 Egg

Salt to taste

Pepper to taste

3 Cups Seasoned Bread Crumbs

6 Cups Vegetable Oil (for frying)

Marinara Sauce (optional)


1. Cook rice according to recipe using chicken broth instead of water & 2 tsp of seasoned butter .


2. Let the rice sit in the refrigerator overnight.


3. Beat egg.


4. Stir egg into cold rice.


5. Place breadcrumbs into a separate bowl.


6. Stir the rest of the ingredients into rice.


7. Form small balls with the rice, dipping them into the breadcrumbs as needed to make the hold together.


8. Place balls into heated oil and fry until golden brown.


9. Serve with marinara sauce.


10. Enjoy!
